I found some time to finally bake my little pepper his birthday cupcake, i hope he likes it. Here is the recipe:
Banana & Peanut Butter Dog Birthday Cupcake
2/3 cup ripe mashed bananas (1 1/2 bananas)
1/2 cup extra virgin olive oil
3 large eggs
3/4 cup water
2 teaspoon vanilla
2 tablespoon raw honey
2 cups organic brown rice flour or rice flour
1 tsp baking soda
2 tsp cinnamon
1/2 cup peanut butter (crunchy unsalted)
Preheat oven to 350°F
In mixing bowl, beat together all wet ingredients: bananas, oil, eggs, water, vanilla, and honey. Stir in dry ingredients into the bowl and beat until smooth. Spoon batter evenly into oiled pan. I used 4 tall ramekins to make individual cupcakes.
Bake for about 35 minutes. Remove from pan, place on rack and cool.
To make Carob Cream Cheese frosting, combine the following ingredients and blend thoroughly :
2 Tbs carob powder
1 tsp vanilla
3 oz. low fat cream cheese
Pepper ended up sharing his birthday cupcake with his new sister, brownie.
