better late than never

I found some time to finally bake my little pepper his birthday cupcake, i hope he likes it.  Here is the recipe:

Banana & Peanut Butter Dog Birthday Cupcake

2/3 cup ripe mashed bananas
(1 1/2 bananas)

1/2 cup extra virgin olive oil

3 large eggs

3/4 cup water

2 teaspoon vanilla

2 tablespoon raw honey

2 cups organic brown rice flour or rice flour

1 tsp baking soda

2 tsp cinnamon

1/2 cup peanut butter (crunchy unsalted)

Directions:

Preheat oven to 350°F

In mixing bowl, beat together all wet ingredients: bananas, oil, eggs, water, vanilla, and honey.  Stir in dry ingredients into the bowl and beat until smooth. Spoon batter evenly into oiled pan.  I used 4 tall ramekins to make individual cupcakes.

Bake for about 35 minutes. Remove from pan, place on rack and cool.

To make Carob Cream Cheese frosting, combine the following ingredients and blend thoroughly :

2 Tbs carob powder

1 tsp vanilla

3 oz. low fat cream cheese

Pepper ended up sharing his birthday cupcake with his new sister, brownie.

I think he really enjoyed it, here he is licking the floor:

(its pretty edible for human consumption as well, peanut butter & bananas together- YUM!)  he says, MASHITA ! (delicious in korean)

About emashita

Nearly two years ago, I was diagnosed with pre-diabetes. My life didn’t change much, but in April of 2011, I became very ill and was diagnosed with full on diabetes. It was a bit of a wake-up call for me and I quickly changed my eating habits. I scoured the internet for information about what to eat and what to avoid when it comes to a diabetic lifestyle. I cut out refined sugars, glutens, rice and pretty much all starches. After 90 days, I went in for blood work and was told that I was free and clear of diabetes. To live a healthy lifestyle inside and out is challenging and rewarding all at once. I started this blog to share my delicious (e is for Emilie and mashita means delicious in Korean) life with friends & family, and of course with new friends that stumble upon my site.
