tomato & peach compote


4 garlic cloves, pressed

1 tablespoon ginger, chopped

1 teaspoon curry powder

2 tablespoon grapeseed oil (extra virgin olive oil can be used as well)

1 onion, chopped

3/4 pound tomato, cut into 1″ pieces

1 peach chopped (i like to use white lady peaches when they’re in season)

2 teaspoon thyme

1 teaspoon sweetener


mix all ingredients together and serve with your favorite protein.  it tastes great with everything.  i like it with pork chops or a white fish.
