last of the strawberries…

With the last quart of strawberries, I decided to make some popsicles.  I got these groovy molds from amazon.com about a month ago and have been waiting to use them.

Creamy Strawberry Lemonade Popsicles

 

1 quart strawberries, pureed

1/4 cup light agave nectar

1 teaspoon kirsch

1/2 lemon squeezed

1 can coconut milk refrigerated (the cream part)

Mix all ingredients in food processor or blender.

  • Pour “popsicle juice” into  groovy molds (don’t completely fill them)
  • Freeze overnight

Nearly two years ago, I was diagnosed with pre-diabetes. My life didn’t change much, but in April of 2011, I became very ill and was diagnosed with full on diabetes.
